This food originated in Abra, a province in the Philippines and is known all over the country. Blend 1 and ½ cup of malagkit dough (galapong), and ½ cup rice galapong, 2 and ½ cup sugar, 4 cups of thick coconut cream from 3 coconuts and 2 big cans of condensed milk. Divide this mixture into three equal parts. In one part, add the mashed ubi heightened by a dash of violet food coloring, to the second part, add egg-yellow food coloring and the third part, nothing is to be added. Just leave it with its white color. Grease a round baking pan with greased banana leaves. Pour the ubi mixture and steam for 30 minutes followed by the second part and again steam for 30 minutes and lastly the third part and steam for another 30 minutes or until firm. Roast a cup of grated coconut and put it on top, Cool before slicing.
