Potato Pancakes

These make a delicious weekend breakfast, a light lunch, or even a Sunday-night supper. Just have the following ingredients:
• 1 egg, separated
• 1 large baking potato, peeled, coarsely grated, and thoroughly drained
• 1 medium onion, finely chopped
• 1 teaspoon finely chopped chives
• Pinch of baking powder
• 2 teaspoons flour
• Salt and pepper to taste
• Nonfat cooking spray
• Plain low-fat or nonfat yogurt
• Unsweetened applesauce

First heat a nonstick skillet over a medium flame. In a bowl, beat the egg white until it holds stiff peaks. In a large bowl, mix together the potato, onion, chives, baking powder, flour and egg yolk. Fold in the egg white and salt and pepper. Spray the skillet with cooking spray. Drop the batter by tablespoonfuls onto the skillet. Brown well on one side, then flip and brown on the other side. Serve immediately with yogurt and applesauce on the side.
