
Ever heard of baked omelet? The recipe that I’m going to share with you now is on how to prepare a baked omelet, not cooked on top of the stove. Here’s the ingredients needed:
• Nonfat cooking spray
• 1 medium onion, finely chopped
• 1 cup mashed potatoes
• 3 eggs, separated
• 3 tablespoons soy milk
• 1 tablespoon finely chopped parsley
• Salt and pepper
• Sliced tomatoes
Preheat the oven to 3500F. Spray an ovenproof skillet with cooking spray. Over medium heat, sauté the onions. Place the potatoes in a bowl, add the egg yolks and soy milk, and beat until smooth. Stir in the onions and chopped parsley. Season to taste with salt and pepper. Beat the egg whites until stiff and fold gently into the potato mixture. Wipe out the skillet and spray with cooking spray. Pour in the batter and bake for about 20 minutes, until the top of the omelet is brown. Fold over and turn onto a platter. Serve with sliced tomatoes.
