By just the title of this recipe I can't imagine mango and shrimp together in one recipe. But you should try it! It’s so yummy when I tasted it in one of the party that I have attended last week. Here’s how it is done.
Ingredients:
12 shrimp, shelled and deveined
2 mangoes, peeled
¼ lb snow peas
4 green onions, chopped
1 cup pecans
Salt and freshly ground pepper
3 tbsp vinaigrette or French dressing
Procedure:
Halve shrimp if large. Cut large slice from each side of the mango pit, and then cut off the remaining flesh. Cut the large mango slices into strips.
Blanch snow peas in boiling water for 1 minute. Drain. Cool under cold running water. If preferred, snow peas can be served raw in the salad.
Combine shrimp, mango, snow peas, green onions. Pecans and seasonings. Pour dressing over. Toss well before serving.
