Gluten is a substance that occurs naturally in wheat. If extracted and cooked with protein-rich foods it can certainly substitute for flesh in the diet for it has the consistency of meat. To make your own gluten, we need 8 cups of flour (bread flour) and 3 cups of water mix to make a stiff dough. Knead very well and place it underwater for half an hour. Pour the starchy water frequently till it is clear. Slice the dough into half inch thick and 5 inches square then cook for an hour in salted water seasoned with onions, soy sauce and yeast extract. Refrigerate until needed.
