Fruit gives you a burst of energy; that’s why I love to include it in my morning meal. I can get tropical fruits easily, but feel free to substitute any of your favorite, locally available fresh fruits, for this dish. Have a serving of this for breakfast and you’ve had your fruit for the day!
• ½ medium kiwifruit, peeled and sliced on the diagonal
• ½ medium papaya, peeled, seeded, and sliced on the diagonal
• ½ medium mango, peeled, seeded, and sliced on the diagonal
• ½ medium banana, peeled, and sliced on the diagonal
• Mint sprigs, for garnish
• ½ cup plain low-fat or nonfat yogurt (optional)
• ¼ cup wheat germ (optional)
Arrange the sliced fruit on a chilled plate and garnish with mint sprigs. You can drizzle the fruit with yogurt and sprinkle with wheat germ; or place the yogurt and wheat germ in a small bowl and use it as a dip for the fruit, if desired.
