Cleaning a Fish

When I was in the Philippines I always buy sea foods at BigR, Robinson Supermarket. Every time I go there, I always observed how they clean the fish. And I would like to share it here with you.

In cleaning a fish, use a sharp knife or a fish scaler and work with a steady, confident touch. To begin the process, place the fish on a cutting board. Hold the fish firmly on the cutting surface and begin scraping off the scales. Work from the tail toward the head, holding the knife or scaler at an angle so as not to slice the skin of the fish. After that rinse the fish immediately after scaling then, split the underside of the fish, remove the entrails, and rinse the fish again.
