
Bibingkang malagkit is a delicacy for snacks. We first boil the diluted coconut milk in a pan then add the malagkit rice and salt. Let it boil until quite dry stirring constantly so as not to burn the rice. Add 2/3 cup sugar. We then line your clay oven with wilted coconut leaves and place the mixture. We then pour the rich coconut milk on top and some sugar and anise seeds. Cover the bibingkahan with live coals and bake until brown. There, you will now have your bibingkang malagkit.
