Pinakbet

Pinakbet is one way of cooking vegetables in the Ilocos Region. This is a combination of different vegetables such as eggplant, gourd or ampalaya, okra, string beans, patola and tomatoes. Cut the vegetables in desired sizes and place it in a casserole. On top of it, put some sliced pork that have been roasted. Cook in a slow fire and add a little “bagoong” to taste.

hmmm.. sarap naman. i miss this dish with bagoong alamang. si hubby ayaw kasi kaya i put patis instead when cooking it and saute it with garlic, onion & tomatoes. Your version of Pinakbet is the one that my Mom calls "Inabraw". It uses bagoong isda and top with grilled fish. Anyhow, whatever it is called. Super sarap talaga ang veggies!

Sarap nito! I just love pinakbet. Though i am allergic to bagoong, i just take anti histamines so as not to deprive myself of this dish.
