Kare-kare

Kare-kare is among the traditional Filipino dish that I love to eat now. I have heard of this dish a long time ago but I only tasted it just last year when I went home to the Philippines . My aunt prepared this food in one of our family gatherings and I’d like to share with you how it is done. Below are the ingredients:

• 1 buntot ng baka (ox tail), cut to 2 inch long
• 1 pata ng baka (ox leg)
• 1 goto ng baka (tripo)
• 5 pcs. Eggplant
• 3 bundles sitaw (string beans)
• 1 puso ng saging (banana bud)
• 2 heads garlic, crushed
• 2 onions, sliced
• 2 c. ground peanut
• 1 ½ c. toasted ground rice
• 1 ½ c. atchuete seed

After having all the ingredients, boil the buntot ng baka, pata, goto in water and atchuete red coloring until tender. Blend in ground peanuts and rice. Add the sliced half cooked vegetables. Serve with bagoong sauted with garlic and onion.
